Jelly beans belong to the group of soft panned products. The jelly centre is produced by a cooking and moulding process. The centre is coated by a sugar syrup solution. AVEBE developed a special starch with the ability to obtain the short texture of the jellies and with process efficiencies due to the fast gelling. Our product for this application is PERFECTAMYL™.
Furthermore we can provide solutions with starch for the jelly bean coating.
Extruded products only need a short drying period resulting in saving energy costs. By cooking extruder the gelatinization of the starch finds place through the injected moisture during extrusion. AVEBE advises PASELLI™ EASY-GEL as the preferred starch in this application. PASELLI™ EASY-GEL has an excellent behavior to produce strings with a superior shelf life performance, an excellent clearness and flexibility.
